du vin is
a dry and fruity white wine elaborated with cepages such as Chardonnay 70%, Geisenheim
25% and white Sauvignon 5%. It makes 12% alcohol per volume. For the dry white
wine amateurs, it accompanies with smoothness fish, seafood, poultry and all dishes
with a white wine sauce. One
can also drink it alone in appéro

Grand Vin Mousseux is a dry sparkling wine , méthode traditionnelle (second fermentation in the bottle), slightly rosé, made with these type of grapevines: Pinot Noir, Chardonnay and Riesling. It makes 12% alcohol per volume.

Correspondances
is a dry rosé wine elaborated exclusively with Pinot Noir and Cabrnet franc grapes. It makes
12% alcohol per volume. It accompanies with wonder pâtés, charcutery
and fine cheeses. It's also refreshing in summer when served at 12 C.

Vino
di Peppe is a dry red wine elaborate mainly with theses type of
vines : 60% Pinot Noir, 35% Baco Noir and 5% Ste-Croix. It is a dry and vigorous
wine which makes 12% alcohol per volume. Aged for one year in French oak, Vino
di Peppe is well structured with a pronounced fruit flavour with a beautiful finale.
Balanced with nuances of fruits, this slightly tannic red wine is characterized
by its stoutness. Served at room temperature, it will accompany with wonder your

Élévation
is a dry and fruity wine white elaborated exclusively with the Riesling vines.
It makes 12% alcohol per volume. The Riesling wine is general-purpose; it accompanies
shells, like oysters or moulds, as well as shellfish like lobster and shrimps,
or roast poultry. It remains a perfect choice for pork. One
can also drink it alone in appéro

Frisson d'hiver is an ice wine made with these grapevines : Chardonnay 50%,
Riesling 40% and Sauvignon Blanc 10%. It is soft and fruity with a rate of alcohol
per volume of 12%, and with 180 grams of residual sugar per liter. Of yellow color
straw, this ice wine is pure fruit flavour; apricot and mango flavour persists
for a long time in mouth. Its liqueur-like brings a smoothness which can support
high acidity.
It
is the elixir of special occasions, a treat between buddies whose best friend
is foie gras. One must drink it alone to appreciate all the smoothness of Frisson d'hiver. Serve it at 14 C, but it can be drank at room temperature; the
cold masks its more beautiful qualities.

Brouillards d'automne is a late harvest dessert wine ( grapes are harvested just before winter in early December and pressed at -6 to -8 C in order to obtain 35 Brix ) is made with Chardonnay and Riesling grapes. Mild and fruity with a rate of alcohol
of 12% per volume and with 120 grams of residual sugar per liter. Of yellow color
straw, this late harvest wine is pure fruit flavour; apricot and mango flavour persists
for a long time in mouth. Its liqueur-like brings a smoothness which can support
high acidity. Oaked for at least 6 to 12 month in French barrels it acompanies blues cheese and pâté de foie gras magnificently, but is usually served with dessert!
Also in rosée with Pinot Noir and Cabernet Franc also oaked in Frech barrels...

Rêve
Parisien is a mistelle of ice wine grape
juice with these types of vines: Chardonnay 50%, Riesling 40% and Sauvignon Blanc 10%.
It is soft and fruity with a rate of alcohol per volume of 18%, and with 280 grams
of residual sugar per liter. This aperitif called mistelle is made according
to the traditional method of the area of Charente by addition of alcohol in the
grape must.
To
make our mistelle, we preserve must for ice wine during the pressing of the grapes.
This technique makes it possible to concentrate to a significant degree the natural
flavours of the grape and preserve a maximum of sugar. Oaked in French barrels for at least 6 to 12 months. Mistelle Rêve
Parisien is usually served as an apéro or like a digestive liqueur...
but can accompany very well foie gras or all good blue cheese
